Not-for-profit books work differently.

A business tracks profit. A not-for-profit has to show where each dollar came from and that it was spent as promised.

That means separate funds, grants with conditions, a board that needs clear reports and, for registered charities, a return to the CRA every year. Denise works only with not-for-profits, so this is her everyday work.
